Pasta Bolognese is a simple, cheap and delicious meal that can be made in no time at all. There are several variations on this dish, but like all of my recipes, I like to keep things simple. The ingredients in this dish are of the highest quality, so it is not necessary to add much to make the flavors explode. Here are the ingredients you will need.
- 1 can San Marzano Peeled Tomatoes (28 oz.)
- 1 lb. Rigatoni
- 1 lb. Ground Beef
- 3 Tablespoons Extra Virgin Olive Oil
- Salt, Pepper and Parmesan Cheese to Taste
Simple enough right?
The great thing is, cooking this meal is easier than buying the ingredients.
Warm the Extra Virgin Olive Oil in a large sauce pan on medium heat. Season the ground beef liberally with kosher salt and cracked pepper and add to the pan, using a wooden spoon or spatula to break the meat up as it cooks. When the beef is mostly brown, add the tomatoes to the pan. (Do not add the liquid in the can, only the tomatoes; you can do this easily by removing the tomatoes out with your wooden spoon.) When the tomatoes are in the pan, crush them with your wooden spoon, until all large chunks of tomato are broken down. For a more rustic, chunky sauce, you can leave larger pieces of tomato intact.
While the sauce is simmering, the rigatoni can be cooked. Make sure the water for the pasta is SEASONED WITH SALT VERY LIBERALLY. The water should be just slightly less salty than sea water. Add the rigatoni when water is a rolling boil and let it cook.
**Here is one very simple tip to make your pasta sauce really pop. Add about a cup of your pasta water into your Bolognese sauce, and let the sauce continue to cook and reduce down. This adds a little bit of a silky texture to the sauce that can’t be beat.**
When the pasta has about 2 minutes left, remove and strain. Add the pasta to the sauce pan immediately, and finish the cooking process in the sauce while constantly mixing. This allows the silky sauce to completely coat the rigatoni, inside and out. Finish cooking the pasta and put it in a large pasta dish, garnish with some freshly grated parmesan cheese and you are ready to grub!!
